We carefully select small producers who supply us with excellent and always fresh raw materials, with particular attention to the Slow Food Presidia of our region. Lentils from Castelluccio, red potatoes from Colfiorito, onions from Cannara, black celery from Trevi, broad beans, fagiolina from Lake Trasimeno, extra virgin olive oil, fresh black truffle from Norcia, Chianina beef and wild pork, cold cuts, sheep and goat cheeses. The raw materials that we use are exclusively from Umbria and this is the feature that has characterized Osteria a Priori since its birth.
